Traditional white cod, enriched with aromatic tartufata salsa and olive oil with truffles – a combination of a classic Dalmatian delicacy and gourmet pleasure.
INGREDIENTS
- 500 gr dried cod
- 2 dl olive oil “Tartufino”
- 1 dl seed oil
- 200 gr salsa tartufate “Tartufino”
- 30 gr garlic
- 3 gr pepper, 20 gr salt, 20 bay leaves
PREPARATION
Beat the cod well with a wooden mallet, place it in a deep bowl, cover with cold water and leave to soak overnight. The next day, put the cod to boil, add salt, bay leaf and garlic and cook until it becomes soft. Once cooked, remove the bones and black skin and divide it into smaller pieces.
In a suitable bowl, beat the cod with a wooden spoon or spoon, adding oil and the broth in which it was cooked. When the cod is half beaten, add the finely chopped čopnjak, salt, pepper and continue beating, adding the “Tartufino” olive oil and seed oil. The cod is ready when it becomes creamy and foamy and a beautiful white color. Then add the “Tartufino” truffle salsa and mix well. Always serve the cod cold.
